Instructions

  1. Preheat oven to 375°F (190°C). If using an unbaked crust, poke holes in the bottom with a fork and blind bake for 10-12 minutes, or until lightly golden. Remove from oven and let cool slightly.
  2. In a medium saucepan, whisk together the sugar, cocoa powder, flour, and salt. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil. Continue to cook, stirring, for 1-2 minutes.
  3. Remove from heat. In a small bowl, whisk a small amount of the hot chocolate mixture into the beaten egg yolks to temper them. Gradually whisk the tempered egg yolks back into the hot chocolate mixture in the saucepan. Return the saucepan to medium-low heat and cook, stirring constantly, for another 1-2 minutes, until the mixture is very thick.
  4. Remove from heat and stir in the butter and vanilla extract until the butter is melted and fully incorporated. Pour the hot chocolate filling into the pre-baked pie crust. Smooth the top with a spoon or spatula.
  5. Let the pie cool at room temperature for at least 30 minutes, then refrigerate for at least 3-4 hours, or until thoroughly chilled and set. For best results, chill overnight.
  6. Serve chilled, topped with whipped cream and chocolate shavings if desired.
