Description

A quick and easy weeknight meal featuring chicken, pasta, garlic, and Parmesan cheese cooked in a single skillet.


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1.5 cups milk
  • 12 oz short pasta, uncooked
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup grated Parmesan cheese, plus more for garnish
  • 2 cups fresh spinach
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned. Remove chicken and set aside.
  2. Add onion to the skillet and cook until softened. Add garlic and cook for 1 minute.
  3. Return chicken to the skillet. Add chicken broth, milk, uncooked pasta, Italian seasoning, salt, and pepper. Stir.
  4. Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes, or until pasta is al dente and liquid is absorbed. Stir occasionally.
  5. Remove from heat. Stir in Parmesan cheese and spinach until spinach wilts.
  6. Let stand for a few minutes. Garnish with parsley and extra Parmesan cheese. Serve hot.

Notes

  • You can use half-and-half instead of milk for a richer sauce.
