Description
A quick and easy weeknight meal featuring chicken, pasta, garlic, and Parmesan cheese cooked in a single skillet.

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1.5 cups milk
- 12 oz short pasta, uncooked
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup grated Parmesan cheese, plus more for garnish
- 2 cups fresh spinach
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned. Remove chicken and set aside.
- Add onion to the skillet and cook until softened. Add garlic and cook for 1 minute.
- Return chicken to the skillet. Add chicken broth, milk, uncooked pasta, Italian seasoning, salt, and pepper. Stir.
- Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes, or until pasta is al dente and liquid is absorbed. Stir occasionally.
- Remove from heat. Stir in Parmesan cheese and spinach until spinach wilts.
- Let stand for a few minutes. Garnish with parsley and extra Parmesan cheese. Serve hot.
Notes
- You can use half-and-half instead of milk for a richer sauce.
- Optional ingredients like onion, spinach, parsley, and extra Parmesan can be adjusted to your preference.
