Description
A quick and easy one-pot meal featuring ground beef, mushrooms, and egg noodles in a creamy sauce.

- 1 tbsp olive oil
- 1 lb ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 8 oz crimini mushrooms, sliced
- 4 cups beef broth
- 1 (10.75 oz) can condensed cream of mushroom soup
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 8 oz egg noodles
- 1/2 cup sour cream
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
- Add onion and cook until softened, about 5-7 minutes. Stir in garlic and mushrooms, cooking for another 3-5 minutes until mushrooms are tender.
- Pour in beef broth, condensed cream of mushroom soup, Worcestershire sauce, and Dijon mustard. Bring to a boil, then add egg noodles. Stir well.
- Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until noodles are tender, stirring occasionally. Add more broth if too thick.
- Remove from heat. Stir in sour cream until incorporated. Season with salt and pepper.
- Garnish with parsley and serve.
Notes
- 80/20 ground beef works well for this recipe.
- If the sauce becomes too thick during simmering, add a little more beef broth.
