Description

A quick and easy one-pot meal featuring ground beef, mushrooms, and egg noodles in a creamy sauce.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 oz crimini mushrooms, sliced
  • 4 cups beef broth
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 8 oz egg noodles
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add onion and cook until softened, about 5-7 minutes. Stir in garlic and mushrooms, cooking for another 3-5 minutes until mushrooms are tender.
  3. Pour in beef broth, condensed cream of mushroom soup, Worcestershire sauce, and Dijon mustard. Bring to a boil, then add egg noodles. Stir well.
  4. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until noodles are tender, stirring occasionally. Add more broth if too thick.
  5. Remove from heat. Stir in sour cream until incorporated. Season with salt and pepper.
  6. Garnish with parsley and serve.

Notes

  • 80/20 ground beef works well for this recipe.
  • If the sauce becomes too thick during simmering, add a little more beef broth.
