- 1 tablespoon poppy seeds
- 1 large egg
- ¾ cup milk
- ¼ cup melted unsalted butter or vegetable oil
- 1 tablespoon orange zest (from about 1 large orange)
- ¼ cup fresh orange juice
Instructions
- Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
- In a separate medium bowl, whisk together the egg, milk, melted butter (or oil), orange zest, and orange juice.
- Pour the wet ingredients into the dry ingredients and mix with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are okay.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy!

- For a richer flavor, use melted butter instead of vegetable oil.
