A comforting and easy Orzo pasta salad, perfect for any meal.
Ingredients

- 1 cup orzo pasta
- 2 cups water
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 1/4 cup red onion, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook orzo pasta according to package directions.
- Drain the pasta and rinse with cold water.
- In a large bowl, combine olive oil, red onion, cherry tomatoes, olives, parsley, and feta cheese.
- Add the cooked orzo to the bowl.
- In a small bowl, whisk together red wine vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Season with salt and pepper to taste.
- Serve immediately or chill for later.
Notes
- Feel free to add grilled chicken or chickpeas for extra protein.
- Add a pinch of red pepper flakes for a little heat.
