- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 large egg
- 1 cup warm water
- 4 tablespoons butter, melted
- 1 large russet potato, peeled and boiled
- 1/2 cup shredded cheddar cheese
- 1/4 cup caramelized onions
- Salt and pepper to taste
Instructions
- In a large bowl, combine flour and salt.
- In a separate bowl, whisk egg and warm water.
- Gradually add wet ingredients to dry ingredients, mixing until a dough forms.
- Knead dough on a lightly floured surface for 5-7 minutes until smooth.
- Cover dough and let rest for 30 minutes.
- In a large bowl, mash the boiled potato.
- Add cheddar cheese, caramelized onions, salt, and pepper to the mashed potato; mix well.
- Roll out dough to 1/8 inch thickness and cut out circles using a cookie cutter or glass.
- Place a spoonful of potato filling in the center of each circle.
- Fold dough over filling to form a half-moon shape and crimp edges to seal.
- Bring a large pot of salted water to a boil.
- Drop pierogi into boiling water and cook for 3-5 minutes, or until they float to the surface.
- Remove pierogi with a slotted spoon and drain.
- Melt butter in a skillet over medium heat.
- Add pierogi to skillet and cook for 2-3 minutes per side, until golden brown.
- Serve hot and enjoy.
Notes
- For best results, ensure the dough is not too sticky. Add flour as needed.
- You can prepare the filling ahead of time and store it in the refrigerator.
