 - 4 bell peppers (various colors), halved and seeded
 - 1 pound ground beef or Italian sausage
 - 1/2 cup chopped pepperoni
 - 1 cup cooked rice or quinoa
 - 1 (15 ounce) can tomato sauce
 - 1 teaspoon Italian seasoning
 - 1/2 teaspoon garlic powder
 - Salt and pepper to taste
 - 2 cups shredded mozzarella cheese
 - Optional toppings: olives, mushrooms, onions
 
Instructions
- Preheat your oven to 375°F (190°C).
 - In a large skillet, brown the ground beef or Italian sausage over medium heat. Drain any excess grease.
 - Stir in the pepperoni, cooked rice or quinoa, tomato sauce, Italian seasoning, garlic powder, salt, and pepper. Mix well.
 - Stuff each bell pepper half with the meat and rice mixture.
 - Place the stuffed peppers in a baking dish and cover with aluminum foil.
 - Bake for 30 minutes.
 - Remove the foil and sprinkle mozzarella cheese over the top of each pepper.
 - Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
 - Garnish with your favorite pizza toppings, if desired.
 - Let cool slightly before serving.

- For a vegetarian option, omit the meat and add more vegetables like mushrooms, onions, and zucchini.
