  • 4 bell peppers (various colors), halved and seeded
  • 1 pound ground beef or Italian sausage
  • 1/2 cup chopped pepperoni
  • 1 cup cooked rice or quinoa
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • Optional toppings: olives, mushrooms, onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef or Italian sausage over medium heat. Drain any excess grease.
  3. Stir in the pepperoni, cooked rice or quinoa, tomato sauce, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  4. Stuff each bell pepper half with the meat and rice mixture.
  5. Place the stuffed peppers in a baking dish and cover with aluminum foil.
  6. Bake for 30 minutes.
  7. Remove the foil and sprinkle mozzarella cheese over the top of each pepper.
  8. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
