- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the pork chops dry with paper towels.
- In a small bowl, mix together salt, pepper, garlic powder, and paprika.
- Rub the spice mixture evenly over both sides of the pork chops.
- Heat olive oil in a skillet over medium-high heat. Sear pork chops for 1-2 minutes per side until browned.
- Transfer the seared pork chops to your slow cooker.
- In the same skillet (no need to clean), whisk together chicken broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
- Pour the broth mixture over the pork chops in the slow cooker.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until pork chops are tender and cooked through.
- Garnish with fresh parsley before serving.

- For extra flavor, you can add sliced onions or garlic cloves to the slow cooker with the pork chops.
- If you prefer a thicker sauce, remove the pork chops and cook the liquid on high for an additional 15-20 minutes, or until reduced.
