- 6 medium potatoes, peeled and cubed
- 4 cups chicken or vegetable broth
- 1 cup milk or cream
- 1/2 cup chopped onion
- 1/4 cup butter
- Salt and pepper to taste
- Optional toppings: shredded cheese, bacon bits, sour cream, chives
Instructions
- In a large pot, melt butter over medium heat. Add onion and cook until softened.
- Add potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to partially blend the soup until it reaches your desired consistency. Alternatively, you can mash some of the potatoes with a fork.
- Stir in milk or cream and heat through. Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- For a thicker soup, mash all of the potatoes. For a thinner soup, add more broth.
- You can add other vegetables to the soup, such as carrots, celery, or garlic.
- For a richer flavor, use heavy cream instead of milk.
