Description

  • 45 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 15×10-inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. Set aside.
  3. In a separate large bowl, whisk together the granulated sugar, brown sugar, eggs, pumpkin puree, and vegetable oil until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared baking pan.
  6. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the pumpkin bars cool completely in the pan on a wire rack before frosting.
  8. To make the cream cheese frosting: In a large bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy.
  9. Add the vanilla extract and mix well.
  10. Gradually add the powdered sugar, one cup at a time, beating until smooth and light. Continue to beat until the frosting is light and fluffy.
  11. Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.
  12. Cut into squares and serve.
