Ingredients

  • 1 (15 ounce) can pumpkin puree
  • 1 (12 ounce) can evaporated milk
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs, beaten
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 box (14.1 ounces) graham crackers, crushed
  • 1 cup melted butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine pumpkin puree, evaporated milk, granulated sugar, brown sugar, eggs, cinnamon, nutmeg, ginger, and salt. Mix well.
  3. In a separate bowl, combine crushed graham crackers and melted butter.
  4. Press half of the graham cracker mixture into the bottom of a 9×13 inch baking dish.
  5. Pour pumpkin mixture over the graham cracker crust.
  6. Sprinkle remaining graham cracker mixture over the pumpkin filling.
  7. Bake for 30-35 minutes, or until set.
  8. Let cool slightly before serving.
