Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and pumpkin pie spice.
  3. Stir in melted butter until the mixture is crumbly.
  4. Press half of the oat mixture into the prepared baking pan.
  5. In a separate bowl, combine pumpkin puree and cranberries. Spread evenly over the oat layer.
  6. Sprinkle the remaining oat mixture over the pumpkin cranberry layer. Top with nuts, if desired.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.
