A comforting and creative twist on classic carbonara, using ramen noodles for a quick and easy meal.


Ingredients

  • 1 package ramen noodles
  • 2 slices bacon, diced
  • 1 clove garlic, minced
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Cook ramen noodles according to package directions, but do not add the seasoning packet. Drain and set aside.
  2. Cook bacon in a pan until crispy. Remove bacon and set aside, leaving bacon fat in the pan.
  3. Add minced garlic to the pan and cook for about 30 seconds until fragrant.
  4. In a bowl, whisk together eggs, Parmesan cheese, salt, and pepper.
  5. Add the cooked ramen noodles to the pan with the garlic and bacon fat. Toss to coat.
  6. Remove the pan from heat. Quickly pour the egg mixture over the noodles, tossing constantly to prevent the eggs from scrambling. The heat from the noodles will cook the eggs.
  7. Stir in the cooked bacon.
  8. Serve immediately, garnished with fresh parsley if desired.
