- 4–5 medium carrots, peeled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon black pepper, freshly ground
- Optional: 1-2 tablespoons fresh parsley or cilantro, finely chopped
- Optional: 1 tablespoon sunflower seeds or pumpkin seeds
Instructions
- Prepare the carrots: Finely grate or shred the peeled carrots using a box grater, food processor, or julienne peeler. Place them into a medium-sized mixing bowl.
- Make the dressing: Whisk together the extra virgin olive oil, apple cider vinegar, fresh lemon juice, sea salt, and black pepper in a small bowl until combined. Taste and adjust seasonings.
- Combine and toss: Pour the dressing over the grated carrots and toss to coat evenly.
- Add optional ingredients: Stir in chopped parsley or cilantro and sunflower or pumpkin seeds if desired.
- Serve: Let the salad sit for 10-15 minutes at room temperature before serving to allow flavors to meld. It can be stored in the refrigerator for up to 3 days.
