Description

A simple, raw carrot salad recipe designed to support hormonal balance, gut health, and skin wellness with detoxifying and fiber-rich ingredients.

Ingredients

Scale
  • 45 medium carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground
  • Optional: 1-2 tablespoons fresh parsley or cilantro, finely chopped
  • Optional: 1 tablespoon sunflower seeds or pumpkin seeds

Instructions

  1. Prepare the carrots: Finely grate or shred the peeled carrots using a box grater, food processor, or julienne peeler. Place them into a medium-sized mixing bowl.
  2. Make the dressing: Whisk together the extra virgin olive oil, apple cider vinegar, fresh lemon juice, sea salt, and black pepper in a small bowl until combined. Taste and adjust seasonings.
  3. Combine and toss: Pour the dressing over the grated carrots and toss to coat evenly.
  4. Add optional ingredients: Stir in chopped parsley or cilantro and sunflower or pumpkin seeds if desired.
  5. Serve: Let the salad sit for 10-15 minutes at room temperature before serving to allow flavors to meld. It can be stored in the refrigerator for up to 3 days.
