Description

Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups fresh strawberries, sliced
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the red velvet cake batter.
  2. In a large mixing bowl, whisk together the dry ingredients for the cake.
  3. In a separate bowl, mix the wet ingredients and combine with the dry ingredients.
  4. Pour the batter into a greased 9-inch round cake pan and bake for 25–30 minutes.
  5. While the cake is baking, prepare the cheesecake filling by mixing cream cheese and sugar until smooth.
  6. Add eggs one at a time and mix well, then stir in vanilla extract.
  7. Once the cake has cooled, pour the cheesecake filling over the top.
  8. Bake the assembled cheesecake at 325°F (160°C) for 35–40 minutes.
  9. Let the cheesecake cool in the pan for 10 minutes, then remove from the pan.
  10. Cool completely at room temperature, then chill in the refrigerator for at least 4 hours.
