Instructions
- Preheat oven to 350°F (175°C). Grease and flour a baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter and granulated sugar until light and fluffy. Beat in egg and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in chopped rhubarb.
- In another bowl, beat cream cheese and powdered sugar until smooth.
- Spread rhubarb mixture into prepared pan. Drop spoonfuls of cream cheese mixture over the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before serving.
Notes
- For a tangier flavor, add a tablespoon of lemon juice to the cream cheese mixture.
- You can use frozen rhubarb if fresh is not available. Thaw and drain before using.
