This recipe makes delicious rhubarb vanilla lemon scones that are easy to prepare.

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup rhubarb, chopped
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add cold butter and mix until crumbly.
- Stir in rhubarb, lemon zest, and vanilla.
- Pour in heavy cream and mix until just combined.
- Turn dough onto a floured surface and shape into a circle.
- Cut into wedges and place on a baking sheet.
- Bake for 15-20 minutes until golden.
Notes
- Serve warm with butter.
- Store leftovers in an airtight container.
