Ingredients

- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives
- 2 oz feta cheese, crumbled
- 2 tablespoons lemon juice
- 4 tablespoons olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.
- Pour the vinaigrette over the salad and toss gently to combine.
- Serve immediately.
