  • 4 large bell peppers (various colors), halved and seeded
  • 1 pound ground Italian sausage
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground sausage over medium heat. Drain any excess grease.
  3. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
  5. Remove from heat and stir in 1/2 cup of the mozzarella cheese and the Parmesan cheese.
  6. Stuff each bell pepper half with the sausage and cheese mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes.
  9. Remove the foil and sprinkle the remaining 1/2 cup of mozzarella cheese over the peppers.
  10. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
  11. Let cool slightly before serving.

  • You can use any type of sausage you prefer, such as sweet, mild, or hot Italian sausage.
