- 1 pound smoked sausage, sliced
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes (about 2 medium)
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, cook the sliced sausage over medium heat until browned. Remove sausage and set aside, leaving drippings in the pot.
- Add olive oil to the pot if needed. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the diced potatoes and the cooked sausage to the pot.
- Simmer for 15-20 minutes, or until potatoes are tender.
- Stir in the milk and shredded cheddar cheese. Cook, stirring, until the cheese is melted and the soup is heated through. Do not boil.
- Season with salt and pepper to taste.
Notes
- For a creamier soup, you can use heavy cream instead of milk.
- Add other vegetables like carrots or celery with the onion for extra flavor and nutrients.
