  • 4 bell peppers (various colors), halved and seeded
  • 1 pound shrimp, peeled, deveined, and cooked
  • 1 pound crab meat, cooked
  • 1/2 cup cooked rice
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped red bell pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Old Bay seasoning
  • 1/4 cup bread crumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked shrimp, crab meat, rice, onion, celery, chopped red bell pepper, mayonnaise, lemon juice, and Old Bay seasoning. Mix well.
  3. Stuff each bell pepper half with the seafood mixture.
  4. In a small bowl, combine bread crumbs and melted butter. Sprinkle over the stuffed peppers.
  5. Place the stuffed peppers in a baking dish and bake for 20-25 minutes, or until the peppers are tender and the topping is golden brown.
  6. Serve hot.
