- 2 carrots, diced
- 1 cup frozen peas
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 cups mashed potatoes
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground lamb or beef over medium heat. Drain any excess fat.
- Add the chopped onion and diced carrots to the skillet and cook until softened, about 5 minutes.
- Stir in the frozen peas, beef broth, tomato paste, Worcestershire sauce, and dried thyme. Season with salt and pepper. Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
- Prepare the mashed potatoes: In a large bowl, mash the cooked potatoes with butter and milk until smooth. Season with salt and pepper.
- Transfer the meat mixture to a baking dish. Spread the mashed potatoes evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbly.
- Let stand for a few minutes before serving.
Notes
- For a richer flavor, use lamb instead of beef.
- Add other vegetables like corn or green beans to the meat mixture.
- Top with shredded cheese before baking for an extra cheesy shepherd’s pie.
