Description

Ingredients

  • 1 (16.5 ounce) roll refrigerated chocolate chip cookie dough
  • 1 (18.3 ounce) box brownie mix
  • Ingredients to prepare brownie mix (eggs, oil, water as per package)
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips or caramel drizzle (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Press the chocolate chip cookie dough evenly into the bottom of the prepared pan to form the base.
  3. Prepare the brownie mix according to package directions. Carefully pour and spread the brownie batter evenly over the cookie dough layer.
  4. In a medium bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth. Beat in the egg and vanilla extract until just combined and smooth.
  5. Carefully spread the cream cheese mixture over the brownie layer.
  6. Bake for 45-55 minutes, or until the edges are set and the cheesecake layer is lightly golden. A toothpick inserted into the brownie layer should come out with moist crumbs (not wet batter).
  7. If using, sprinkle chocolate chips over the hot bars right after baking so they melt slightly.
  8. Let the bars cool completely at room temperature, then chill in the refrigerator for at least 2-3 hours (or preferably overnight) before slicing and serving.
