- 1 (16.5 ounce) roll refrigerated chocolate chip cookie dough
- 1 (18.3 ounce) box brownie mix
- Ingredients to prepare brownie mix (eggs, oil, water as per package)
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips or caramel drizzle (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Press the chocolate chip cookie dough evenly into the bottom of the prepared pan to form the base.
- Prepare the brownie mix according to package directions. Carefully pour and spread the brownie batter evenly over the cookie dough layer.
- In a medium bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth. Beat in the egg and vanilla extract until just combined and smooth.
- Carefully spread the cream cheese mixture over the brownie layer.
- Bake for 45-55 minutes, or until the edges are set and the cheesecake layer is lightly golden. A toothpick inserted into the brownie layer should come out with moist crumbs (not wet batter).
- If using, sprinkle chocolate chips over the hot bars right after baking so they melt slightly.
- Let the bars cool completely at room temperature, then chill in the refrigerator for at least 2-3 hours (or preferably overnight) before slicing and serving.
