Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 (15 ounce) can pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9×13 inch baking dish.
  3. In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth.
  4. Add pumpkin puree, eggs, vanilla extract, cinnamon, ginger, and cloves. Mix until well combined.
  5. Pour pumpkin cheesecake mixture over the graham cracker crust.
  6. Bake for 30-35 minutes, or until the center is just set.
  7. Let cool completely before refrigerating for at least 2 hours.
  8. Cut into bars and serve.
