Description

These soft, buttery sugar cookies are infused with the warm flavors of cinnamon and have a delightful cinnamon swirl filling, reminiscent of classic cinnamon rolls.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Filling:
  • 1/2 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup (1/2 stick) unsalted butter, melted

Instructions

  1. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. In a small bowl, combine the brown sugar and cinnamon for the filling.
  6. Divide the cookie dough in half. Roll out one half of the dough on a lightly floured surface into a rectangle, about 1/4 inch thick.
  7. Brush the rolled-out dough with half of the melted butter. Sprinkle half of the cinnamon-sugar mixture evenly over the butter.
  8. Roll up the dough tightly, starting from one of the long sides, to form a log.
  9. Repeat steps 6-8 with the remaining dough, melted butter, and cinnamon-sugar mixture.
  10. Wrap both dough logs tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
  11. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  12. Slice the chilled dough logs into 1/4-inch thick rounds.
  13. Place the cookie slices onto the prepared baking sheets, leaving about 2 inches between them.
  14. Bake for 9-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  15. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, you can add a simple glaze made with powdered sugar and milk.
  • Ensure your butter is softened but not melted for the best cookie texture.
  • Chilling the dough is crucial for easy slicing and to prevent excessive spreading during baking.
