- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup pasta (such as elbow macaroni)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
- Pour in the beef broth and diced tomatoes. Stir in the oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the pasta and cook until tender, about 8-10 minutes.
- Garnish with fresh parsley before serving.
