- 1 medium spaghetti squash
- 1 tablespoon olive oil
- 1 pound cooked chicken, shredded (optional)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash cut-side down on a baking sheet.
- Roast for 40-50 minutes, or until tender.
- Let the squash cool slightly, then shred the flesh with a fork.
- In a large bowl, combine the shredded spaghetti squash, cooked chicken (if using), marinara sauce, mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Bake for 20-25 minutes, or until heated through and bubbly.
Notes
- For a vegetarian option, omit the chicken and add your favorite vegetables like spinach, mushrooms, or bell peppers.
- You can prepare the spaghetti squash ahead of time to save on cooking time.
