 - 1 1/2 cups all-purpose flour
 - 1 teaspoon baking powder
 - 1/2 teaspoon baking soda

 - 1/2 cup granulated sugar
 - 1/4 cup brown sugar, packed
 - 1/2 cup unsalted butter, melted
 - 1 large egg
 - 1/2 cup buttermilk
 - 1 teaspoon vanilla extract
 - 1 cup peeled and diced apples
 - For the Cheesecake Swirl:
 - 4 ounces cream cheese, softened
 - 1/4 cup granulated sugar
 - 1 large egg yolk
 - 1/2 teaspoon vanilla extract
 
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
 - In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
 - In a separate bowl, combine granulated sugar, brown sugar, melted butter, egg, buttermilk, and vanilla extract. Mix well.
 - Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced apples.
 - In a small bowl, beat together cream cheese and sugar until smooth. Add egg yolk and vanilla extract; mix until well combined.
 - Fill each muffin liner about 2/3 full with apple batter. Top each muffin with a spoonful of cheesecake mixture. Use a knife or toothpick to swirl the cheesecake into the apple batter.
 - Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
 - Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
