  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, combine granulated sugar, brown sugar, melted butter, egg, buttermilk, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced apples.
  5. In a small bowl, beat together cream cheese and sugar until smooth. Add egg yolk and vanilla extract; mix until well combined.
  6. Fill each muffin liner about 2/3 full with apple batter. Top each muffin with a spoonful of cheesecake mixture. Use a knife or toothpick to swirl the cheesecake into the apple batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
