Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, beat together sugar, oil, eggs, and vanilla extract until well combined.
  4. Add the mashed bananas and shredded carrots to the wet ingredients and mix until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For extra moisture, add 1/4 cup of applesauce to the batter.
  • Store leftover bread in an airtight container at room temperature for up to 3 days.
  • You can also freeze the bread for longer storage. Wrap tightly in plastic wrap and then in foil, and freeze for up to 2 months.
