- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper (if using), salt, and black pepper to form a paste.
- Rub the spice paste all over the chicken, including under the skin if desired.
- Place the lemon halves inside the chicken cavity.
- Place the chicken in a roasting pan or on a baking sheet with a wire rack.
- Roast for 60-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh, and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving and serving. Garnish with fresh parsley if desired.
