- 2 large yellow onions, sliced into 1/2-inch rings
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups cold beer or club soda
- Vegetable oil, for frying
Instructions
- Separate the onion slices into individual rings.
- In a medium bowl, whisk together the flour, cornmeal, Cajun seasoning, salt, and pepper.
- Gradually whisk in the cold beer or club soda until you have a smooth batter, similar in consistency to pancake batter.
- Heat about 2-3 inches of vegetable oil in a deep skillet or Dutch oven to 375°F (190°C).
- Dip each onion ring into the batter, ensuring it’s fully coated. Let any excess batter drip off.
- Carefully place the battered onion rings into the hot oil, working in batches to avoid overcrowding the skillet.
- Fry for 2-4 minutes per side, or until golden brown and crispy.
- Remove the onion rings with a slotted spoon and place them on a wire rack set over a baking sheet to drain excess oil.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra spice, add a pinch of cayenne pepper to the batter.
- Ensure the oil is at the correct temperature for crispy, not greasy, onion rings.
