- 1 pound yellow squash, sliced
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/4 cup shredded cheddar cheese
- 1/4 cup milk
- 1 egg, beaten
- 1/2 cup crushed Ritz crackers
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- Melt 1 tablespoon butter in a large skillet over medium heat. Add squash, onion, and green bell pepper. Cook until tender, about 5-7 minutes.
- In a large bowl, combine the cooked squash mixture, cream of mushroom soup, sour cream, cheddar cheese, milk, and beaten egg. Stir until well combined.
- Pour the mixture into a lightly greased 8×8 inch baking dish.
- In a small bowl, combine the crushed Ritz crackers and melted butter. Sprinkle evenly over the squash mixture.
- Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
Notes
- For a cheesy variation, add an extra 1/4 cup of cheddar cheese to the squash mixture.
- You can substitute cream of chicken soup for cream of mushroom soup if preferred.
- Ensure crackers are finely crushed for an even topping.
