Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine strawberries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla extract. Gently toss and set aside.
  3. In a separate bowl, whisk together flour, 1/4 cup sugar, baking powder, baking soda, and salt.
  4. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Add buttermilk and stir until just combined. Do not overmix.
  6. Pour strawberry mixture into a 9×13 inch baking dish.
  7. Drop spoonfuls of biscuit dough over the strawberry mixture.
  8. Brush the biscuit topping with melted butter and sprinkle with 2 tablespoons sugar.
  9. Bake for 30-35 minutes, or until the biscuit topping is golden brown and the strawberry filling is bubbly.
