Description

These truffles combine the creamy texture of cheesecake with the sweet flavor of strawberries. They are easy to make and require no baking.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry puree
  • 2 cups crushed graham crackers
  • 12 ounces white chocolate, melted
  • 2 tablespoons freeze-dried strawberries, crushed (for garnish)

Instructions

  1. In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Stir in the strawberry puree until combined.
  3. Fold in the crushed graham crackers until a dough forms.
  4. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  5. Refrigerate for at least 30 minutes, or until firm.
  6. Melt the white chocolate in a microwave-safe bowl or over a double boiler.
  7. Dip each truffle into the melted white chocolate, ensuring it is fully coated.
  8. Place the coated truffles back on the parchment-lined baking sheet.
  9. Immediately sprinkle with crushed freeze-dried strawberries.
  10. Refrigerate until the chocolate has set, about 15-20 minutes.

Notes

  • For best results, use full-fat cream cheese.
  • You can make strawberry puree by blending fresh or frozen strawberries until smooth.
