Instructions
- In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Stir in the strawberry puree until combined.
- Fold in the crushed graham crackers until a dough forms.
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes, or until firm.
- Melt the white chocolate in a microwave-safe bowl or over a double boiler.
- Dip each truffle into the melted white chocolate, ensuring it is fully coated.
- Place the coated truffles back on the parchment-lined baking sheet.
- Immediately sprinkle with crushed freeze-dried strawberries.
- Refrigerate until the chocolate has set, about 15-20 minutes.
