Description
Classic stuffed bell peppers filled with seasoned ground beef and a savory tomato sauce, baked until tender.

- 4 large bell peppers (any color)
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup cooked rice (optional)
- 1/2 cup shredded cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the tomato sauce, oregano, basil, salt, and pepper. If using, stir in the cooked rice.
- Bring the mixture to a simmer and cook for 5-10 minutes, allowing the flavors to meld.
- Spoon the beef mixture evenly into the hollowed-out bell peppers.
- Place the stuffed peppers in a baking dish. You can add a little water to the bottom of the dish to help steam the peppers.
- Cover the baking dish with foil.
- Bake for 30 minutes.
- Remove the foil, and if using cheese, sprinkle it over the top of the peppers.
- Bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the filling.
- You can substitute ground turkey or chicken for ground beef.
- Feel free to add other vegetables like corn or diced zucchini to the filling.
