- 2 Delicata Squash, halved lengthwise and seeds removed
- 1 tablespoon Olive Oil
- 1/2 cup Onion, diced
- 1 cup Cooked Quinoa
- 1/2 cup Dried Cranberries
- 1/2 cup Chopped Walnuts
- 1/4 cup crumbled Feta Cheese (optional)
- 2 tablespoons Fresh Parsley, chopped
- Salt and Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Brush the cut sides of the delicata squash with olive oil and season with salt and pepper.
- Place squash cut-side up on a baking sheet and roast for 20-25 minutes, or until tender.
- While the squash is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- In a bowl, combine the cooked onion, quinoa, dried cranberries, walnuts, feta cheese (if using), and parsley. Season with salt and pepper.
- Once the squash is tender, remove it from the oven.
- Fill each squash half with the quinoa mixture.
- Return the stuffed squash to the oven and bake for another 10-15 minutes, or until the filling is heated through.
- Serve warm.
