  • 2 Delicata Squash, halved lengthwise and seeds removed
  • 1 tablespoon Olive Oil
  • 1/2 cup Onion, diced
  • 1 cup Cooked Quinoa
  • 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Walnuts
  • 1/4 cup crumbled Feta Cheese (optional)
  • 2 tablespoons Fresh Parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush the cut sides of the delicata squash with olive oil and season with salt and pepper.
  3. Place squash cut-side up on a baking sheet and roast for 20-25 minutes, or until tender.
  4. While the squash is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  5. In a bowl, combine the cooked onion, quinoa, dried cranberries, walnuts, feta cheese (if using), and parsley. Season with salt and pepper.
  6. Once the squash is tender, remove it from the oven.
