Description
This chickpea salad combines chickpeas with fresh tomatoes and basil. It is a simple, refreshing dish.
Ingredients

- 1 pint cherry tomatoes, halved
- 1/2 cup chopped red onion
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium bowl, combine the rinsed chickpeas, halved cherry tomatoes, chopped red onion, and chopped basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
- Pour the dressing over the chickpea mixture and toss to combine.
- Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
Notes
- For extra flavor, add a pinch of red pepper flakes.
