This salad combines carrots, chickpeas, and a Moroccan-inspired dressing. It is a simple and flavorful dish.
Ingredients

- 1 pound carrots, peeled and grated
- 1 (15-ounce) can chickpeas, rinsed and drained
- ½ cup chopped fresh cilantro
- ¼ cup chopped fresh mint
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- ¼ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the grated carrots, chickpeas, cilantro, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, cumin, coriander, and cayenne pepper (if using).
- Pour the dressing over the carrot and chickpea mixture. Toss to combine.
- Season with salt and pepper to taste.
- Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
Notes
- For extra crunch, add a handful of chopped toasted almonds or pistachios.
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
