Description

This salad combines carrots, chickpeas, and a Moroccan-inspired dressing. It is a simple and flavorful dish.


Ingredients

  • 1 pound carrots, peeled and grated
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the grated carrots, chickpeas, cilantro, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, cumin, coriander, and cayenne pepper (if using).
  3. Pour the dressing over the carrot and chickpea mixture. Toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
