- 3 lbs sweet potatoes, peeled and cut into 1-inch pieces
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ¼ cup milk
- 2 large eggs
- 1 tsp vanilla extract

- ¼ tsp ground nutmeg
- ½ tsp salt
- 3 cups mini marshmallows (for marshmallow topping)
- ½ cup all-purpose flour (for pecan streusel topping)
- ½ cup packed light brown sugar (for pecan streusel topping)
- ¼ cup unsalted butter, cold and cubed (for pecan streusel topping)
- ½ cup chopped pecans (for pecan streusel topping)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Place sweet potato pieces in a large pot, cover with cold water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain well.
- Transfer drained sweet potatoes to a large mixing bowl. Add softened butter, granulated sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mash until smooth and creamy.
- Spread the sweet potato mixture evenly into the prepared baking dish.
- For marshmallow topping: Arrange mini marshmallows evenly over the sweet potato mixture.
- For pecan streusel topping: Combine flour, brown sugar, cold butter, and chopped pecans in a medium bowl. Mix until crumbly. Sprinkle evenly over the sweet potato mixture.
- Bake for 25-30 minutes, or until heated through and the topping is golden brown and bubbly. Watch marshmallows carefully to prevent burning. Cover loosely with foil if the topping browns too quickly.
- Let the casserole rest for a few minutes before serving warm.
Notes
- For a deeper flavor, you can use brown sugar instead of granulated sugar.
- Whole milk or half-and-half can be used for the milk.
- If using marshmallows, monitor them closely during baking to prevent burning.
