Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup evaporated milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 (9-inch) unbaked pie crust

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, and salt. Mix these ingredients well.
  3. Add the eggs, evaporated milk, melted butter, and vanilla extract to the sweet potato mixture. Beat until the mixture is smooth and well combined.
  4. Pour the filling into the unbaked pie crust.
  5. Bake for 50-60 minutes. The pie is ready when the center is set and a knife inserted near the center comes out clean.
  6. Let the pie cool completely on a wire rack before you serve it.
