Description
A hearty casserole featuring tater tots, ground beef, and mixed vegetables.

- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (10.75 oz) can condensed cream of mushroom soup
- 1 cup milk
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (16 oz) package frozen mixed vegetables
- 32 oz frozen tater tots
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown ground beef over medium heat. Drain excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- In a large bowl, combine the cooked ground beef mixture, cream of mushroom soup, milk, garlic powder, salt, pepper, and mixed vegetables. Stir well.
- Pour the mixture into a 9×13 inch baking dish.
- Arrange the tater tots in a single layer over the top of the beef and vegetable mixture.
- Bake for 30-40 minutes, or until the tater tots are golden brown and the casserole is heated through.
- Let stand for a few minutes before serving.
Notes
- For a cheesier casserole, sprinkle shredded cheddar cheese over the tater tots during the last 10 minutes of baking.
- Customize the vegetables to your liking. Corn, peas, or green beans are good additions.
