Description

A hearty casserole featuring tater tots, ground beef, and mixed vegetables.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (16 oz) package frozen mixed vegetables
  • 32 oz frozen tater tots

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown ground beef over medium heat. Drain excess grease.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. In a large bowl, combine the cooked ground beef mixture, cream of mushroom soup, milk, garlic powder, salt, pepper, and mixed vegetables. Stir well.
  5. Pour the mixture into a 9×13 inch baking dish.
  6. Arrange the tater tots in a single layer over the top of the beef and vegetable mixture.
  7. Bake for 30-40 minutes, or until the tater tots are golden brown and the casserole is heated through.
  8. Let stand for a few minutes before serving.

Notes

  • For a cheesier casserole, sprinkle shredded cheddar cheese over the tater tots during the last 10 minutes of baking.
  • Customize the vegetables to your liking. Corn, peas, or green beans are good additions.
