Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchinis, sliced
  • 1/2 cup salsa

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces to the skillet. Sprinkle with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook, stirring occasionally, until browned on all sides and almost cooked through, about 5-7 minutes.
  3. Add sliced zucchini to the skillet. Cook, stirring occasionally, until the zucchini is tender-crisp, about 5-7 minutes.
  4. Pour salsa over the chicken and zucchini. Stir to combine and cook for another 2-3 minutes, until heated through.
  5. If using, sprinkle shredded cheese over the top and let it melt, about 1-2 minutes.
  6. Garnish with chopped cilantro and avocado slices, if desired. Serve hot.
