  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and mushrooms and cook until mushrooms are browned, about 5-7 minutes.
  5. Pour in chicken broth and heavy cream. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in Parmesan cheese, Italian seasoning, salt, and pepper.
  7. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until chicken is cooked through and sauce has thickened.
  8. Garnish with fresh parsley before serving.
