- 1 pound pasta (penne, rotini, or your favorite shape)
- 1.5 pounds boneless, skinless chicken breasts, cooked and shredded
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup milk
- 8 ounces cream cheese, softened
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in cream of chicken soup, milk, and cream cheese. Cook until smooth and creamy.
- Remove from heat and stir in cheddar cheese, mozzarella cheese, Parmesan cheese, and parsley. Season with salt and pepper to taste.
- Add cooked pasta and shredded chicken to the cheese sauce. Stir to combine.
- Pour mixture into a greased 9×13 inch baking dish.
- Bake for 20-25 minutes, or until heated through and bubbly.
- Let stand for 5-10 minutes before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the cheese sauce.
- You can use rotisserie chicken to save time.
- Add broccoli or other vegetables for a healthier meal.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
