- 1/4 cup cornichons or small pickled cucumbers
- 4 oz soft cheese (e.g., goat cheese, burrata), optional
- 4 oz hard cheese (e.g., Manchego, aged cheddar), sliced
- 1/2 cup cherry tomatoes, halved
- Fresh herbs (dill, parsley, chives), for garnish
- Good quality extra virgin olive oil
- Flaky sea salt
- Freshly ground black pepper
- 1 lemon, cut into wedges
- Optional: White bean dip or a simple aioli
Instructions
- Choose a large cutting board, platter, or serving tray to arrange your tapas.
- Gently open the tins of fish. Arrange the fish directly from the tins on the board or transfer them to small decorative bowls, including some of their flavorful oils.
- Arrange the sliced baguette or artisan bread artfully around the board. If using, place the soft cheese and the slices of hard cheese on the platter.
- Scatter the marinated olives, cornichons, and halved cherry tomatoes in various spots on the board.
- Sprinkle fresh herbs generously over the entire platter. Drizzle a little extra virgin olive oil over the fish, vegetables, and cheeses.
- Season the platter with flaky sea salt and freshly ground black pepper. Place the lemon wedges strategically for squeezing over the fish.
- If desired, add small bowls of white bean dip or aioli to accompany the bread and fish.
- Serve immediately with your date and a complementary beverage, such as a crisp white wine or sparkling water.
