Description

These cookies combine the classic flavors of tiramisu with a crinkled texture. They are soft, chewy, and perfect for a sweet treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup strong brewed coffee, cooled
  • 1/4 cup Kahlua or coffee liqueur (optional)
  • 1 cup powdered sugar, for rolling
  • 2 tablespoons unsweetened cocoa powder, for rolling

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the cooled coffee and Kahlua (if using) until fully incorporated. The dough will be soft.
  6. Cover the bowl and chill the dough for at least 2 hours, or overnight.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. In a shallow bowl, combine the powdered sugar and 2 tablespoons of cocoa powder for rolling.
  9. Scoop rounded tablespoons of dough and roll them into balls.
  10. Generously roll each dough ball in the powdered sugar mixture, ensuring it is completely coated.
  11. Place the coated cookies 2 inches apart on the prepared baking sheets.
  12. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  13. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, you can use espresso.
  • Ensure the coffee is completely cooled before adding it to the dough to prevent it from cooking the eggs.
  • Chilling the dough is important for the crinkle effect and to make it easier to handle.
