- 1 cup breadcrumbs (or crushed crackers for gluten-free)

- 0.5 cup finely chopped bell pepper (any color)
- 0.25 cup milk (dairy or non-dairy)
- 1 large egg
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp dried Italian seasoning
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
- In a large bowl, combine the ground turkey, breadcrumbs, chopped onion, bell pepper, milk, egg, minced garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Form the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
- In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard for the glaze.
- Spread about half of the glaze over the top of the meatloaf.
- Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). For the last 10-15 minutes of baking, spread the remaining glaze over the meatloaf.
- Remove from the oven and let it rest for 10 minutes before slicing and serving.
Notes
- Do not overmix the meatloaf mixture; this can make the meatloaf tough.
- For a gluten-free option, use crushed crackers instead of breadcrumbs.
