  • 1 pound lean ground turkey
  • 4 medium bell peppers (various colors)
  • 1 cup cooked brown rice
  • 1 (15 ounce) can diced tomatoes, drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup shredded mozzarella cheese, divided
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut bell peppers in half lengthwise and remove seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add onion and celery and cook until softened, about 5 minutes.
  4. Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  5. Stir in diced tomatoes, cooked brown rice, garlic powder, oregano, salt, and pepper.
  6. Remove from heat and stir in 1/4 cup of mozzarella cheese and parsley.
  7. Spoon the turkey mixture into the bell pepper halves.
  8. Place the stuffed peppers in a baking dish and sprinkle with the remaining 1/4 cup of mozzarella cheese.
  9. Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  10. Let cool slightly before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the turkey mixture.
  • You can substitute ground chicken or beef for the turkey.
  • Feel free to add other vegetables to the filling, such as corn, black beans, or zucchini.
