Description

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Add dry ingredients to wet ingredients alternately with mashed bananas, beginning and ending with dry ingredients. Mix until just combined.
  5. Pour batter into prepared pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For best results, use very ripe bananas.
  • You can add nuts or chocolate chips to the batter if desired.
