Tangy and sweet vegan lime bars with a graham cracker crust and zesty lime filling.
Ingredients

- 1 ½ cups graham cracker crumbs (ensure vegan)
- ¼ cup granulated sugar
- ⅓ cup melted vegan butter
- 1 cup fresh lime juice (about 6–8 limes)
- ¾ cup full-fat canned coconut milk, chilled (thick cream only)
- ½ cup granulated sugar
- ¼ cup cornstarch
- Zest of 2 limes
- ¼ teaspoon turmeric (for color, optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
- Combine graham cracker crumbs, sugar, and melted vegan butter in a medium bowl. Press mixture evenly into the bottom of the prepared pan.
- Bake for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly while you prepare the filling.
- In a medium saucepan, whisk together lime juice, coconut milk cream, sugar, cornstarch, lime zest, and turmeric (if using).
- Heat over medium heat, stirring constantly, until the mixture thickens significantly, about 5-7 minutes. It should be very thick and bubbly.
- Pour the hot lime filling over the cooled crust and spread evenly.
- Refrigerate for at least 4 hours, or until completely set.
- Once firm, use the parchment paper overhang to lift the bars out of the pan. Cut into squares.
- Garnish with extra lime zest or coconut flakes, if desired, before serving.
Notes
- Ensure graham crackers and butter are vegan.
- Chill coconut milk to separate cream for a thicker filling.
- Refrigerate bars completely for best results.
